I had 2 cups leftover cooked brown rice and no dinner. So, here I come up with the idea for a quick and easy to make stir-fry.
Start with the Halloumi. Cut the Halloumi cheese into cubes and put them into a bowl and cover with the marinade (olive oil and Garam Masala). Leave in the fridge for at least 15 min or until you prepare the rest of the ingredients.
Sauté onion, garlic and carrots for 2-3 minutes in a small amount of water. Add chopped dock leaves and the marinated Halloumi and cook for 2-3 minutes. Add the soy sauce and stir.
Dish out stir-fry on top of cooked brown rice. You can use other whole grains for basis as well.
