Here is one of my favorite dessert recipes that I owe to a favorite person of mine 🙂 I totally enjoy it and took the rest to my office for the afternoon. It is filling and energising and so delicious!
Natural sweet vegetables are the perfect way to satisfy your sweet tooth and are great against sugar cravings.
- sweet potatoes
- lemon zest
- seeds – pumpkin and sesame
- coconut chips
- maple syrup
Boil the sweet potatoes until soft (it takes about 40 minutes with the stovetop set to medium heat).
In the meantime: soak a handful of raisins in a shot glass full of rum (aged and spicy rum is better).
Let the potatoes cool, then peel them and mash them with a fork. Add cinnamon, nutmeg and just a tad of lemon zest.
In a small pan on the stovetop toast the pumpkin seeds, adding the sesame seeds towards the end (they toast faster) all the while stirring continuously.
Spread the mashed sweet potatoes in a casserole dish.
Sprinkle the toasted seeds on top, add the raisins, along with the inevitable few drops of rum 🙂
A handful of coconut shavings adds good texture and a few drops of maple syrup will lend sweetness if the potatoes alone aren’t sweet enough.
